It is hard to find a “non-touristy” restaurant in Venice, because most of the people there ARE tourists. But things to avoid are most canalside spots (especially along the Grand Canal), tables set in the well-known campos, and places with multi-lingual menus. I won't say that 'touristy' is a bad word, because ultimately, it is touristy because there is a lot to offer to draw people in.
You have some control on how you react being there, either by accepting crowds, traveling off season, or going further afield. Touristy often is used to describe the greatest wonders of the world, which attract large numbers of people wanting to see or experience them. As opposed to experienced travelers who, for the most part, saw the wonders years ago and now go looking for different experiences and advise others to skip what they themselves have already seen.
